Chili Lime Grilled Chicken topped with pico de gallo and a dollop of sour cream - marinate chicken breasts for at least 4 hours before grilling. Marinade: lime juice, garlic, cilantro, chipotle chili powder, red pepper flakes, smoked paprika, cumin, kosher salt, and black pepper. Pico de gallo: de-seeded plum tomatoes (3) diced finely, 1 TBL cilantro finely chopped, 1/2 jalapeño de-seeded, 3-4 TBL yellow onion diced finely, 1 clove garlic, a pinch of kosher salt. Make ahead an hour or two to allow flavors to meld.
