Joy the Baker's olive oil-braised chickpeas with little slices of 🍋 sunshine ☀️! Sauté finely diced shallot or onion and transfer to a baking dish. Top with chickpeas, some capers, salt, pepper, red pepper flakes, and mix. Fill with olive oil until mostly covered, and top with lemon slices and thyme sprigs. Wrap with foil and bake until bubbly and melty, about 30 minutes at 375. Good with toast or straight out of the bowl
