Stock day! I save most of my veggie scraps in a big baggie in the freezer and when it gets full, I make veggie stock. This is mostly onion and garlic skins, kale ribs, carrot peels and tops, thyme and parsley stems (and a bit of whole fresh herbs), and cabbage leaves, along with peppercorns, salt, and bay leaves. Simmer simmer simmer and then strain! 🍲
