Keto Nachos
Cool ground beef with minced onion and garlic, add tomato paste, and taco-ish seasonings (paprika, chili powder smoked salt, pepper, cumin, cayenne, etc.)
Toast pork rinds at 375° for 1-2 minutes… remove, let cool, top with beef and shredded cheese (I used cheddar and gruyere)… return to oven until cheese melts… remove from oven, add scallions, olive tapenade, diced jalapeño, more cheese… set to broil for a couple minutes… remove, top with avocado and chili flakes… serve immediately with shredded romaine on the side
