sweet potato + lentil curry (cheat version! uses canned lentil soup)
Roast a slit sweet potato in about an inch of water @400F in a dish with lid for about 40 minutes. Add your lentils, a bay leaf, spices/curry sauce salt etc and about a cup or so of full fat coconut milk let simmer on low. when the sweet potato is done dice into cubes add it to the curry with some spinach or kale. Serve over jasmine rice.
