Lasagne Roll Ups
Make tomato sauce by sautéing crushed garlic in olive oil then adding hand-crushed canned tomatoes, dried basil, dried oregano, salt, pepper. Simmer sauce while bringing water to boil for the lasagna noodles. Cook the pasta when the water boils, adding salt to the water.
Meanwhile, mix ricotta, shredded mozzarella, a little grated parmesan, eggs, chopped parsley, a little salt, pepper.
Drain and rinse the pasta. Spread some cheese mixture on one noodle and roll it up and lay down in casserole with some of the sauce in the bottom. Continue until the pasta or cheese is done. Poor the remaining sauce over. Maybe sprinkle a little grated parmesan over the top.
Bake at 350*F for 30 minutes.
