Zucchini "boats". Stuffed them with "leftover" braised lamb shanks that were cooked with red wine, canned crushed tomatoes, onion, celery, carrots, garlic, red bell pepper, mushrooms, cannelini beans, baby spinach and lots of warm spices; cinnamon, coriander, cumin, oregano and a touch of crushed red pepper flakes. Plan to top them with a little bit of shredded cheese and put them under the broiler for a minute or two.
