Take mushrooms and carefully remove the stems and gills. Chop up an onion, garlic, and the stems. Fry some chopped bacon in a pan. When cooked remove bacon and most of the fat from the pan. And add in the mushroom and onion mixture, throw in a little white wine, salt and pepper. Once cooked, allow mixture to cool, throw in desired cheese and fill mushroom caps. Bake at 350 for 25 min.
