Choose and clean any type of flatfish you choose. Carve a pocket inside them.
Shove chopped scallions and minced garlic into the pockets. Not much, enough to fill up half a bowl and give it some flavour. Drizzle some teriyaki sauce into the pocket.
Smear olive oil, pepper and salt over the top and bottom of the fish, and bake at 435F/225C for around 20-30 minutes with the top of the fish covered in foil.
Remove foil on top and leave in oven for 10-15 minutes, before serving with Peri Peri sauce.
You can choose assorted veggies to go along with this such as cherry tomatoes, broccoli, potatoes, etc.
