Kale pesto pasta with roasted butternut squash!! Inspired by what was in my pantry and the amazing Melissa Clark.. Peel, seed and chop one butternut squash. Roast with olive oil salt and pepper. Destem one bunch of black Kale, rough chop and blanch. Drain Kale and add to food processor with, 2 garlic cloves, 1/4 cup pine nuts, splash of lemon juice. Slowly add olive oil and Whiz it together. Salt and pepper to taste. Boil pasta according to package. Drain pasta reserving some of the water. Mix pesto and pasta. Add roasted squash. Finish with Parmesan cheese.
