Heat up olive oil and add one chopped onion, one centimeter of chopped ginger and one chopped clove of garlic. Add one TB of grounded coriander, 1/2 TB of cumin, 1 TB of curry powder and the juice of half a lemon. Then chop up some orange pepper and some carrot. Let everything heat up and then add 100 grams of red lentils. Cover everything with vegetable stock and let simmer for 10-15 minutes. Then add a few cups of rughly chopped kale and let simmer for another few minutes. Season with salt, pepper, more lemon juice and finely chopped coriander. Serve with cooked brown rice
