Roast salmon with panko. Tried a trick I saw on Jacques Pepin-mayonnaise! I don't like mayonnaise, but Jacques said try it and voila...the salmon was moist and delicious. This time I added a bit of Dijon mustard (another Jacques suggestion) and it added a complementary bite. Make a paste of mayonnaise and Dijon mustard, spread on the salmon and top with panko. Bake in a 400 degree F oven for 15 minutes. If the top is not browned enough, place it quickly under the broiler.
