Parboil two potatoes, shred and mix with 1/2 c. shredded cheddar cheese. Press into the bottom and sides of a muffin tin, bake at 350 for 20 mins. When dry, layer a pinch of shredded cheese and crumbled bacon. Crack a whole egg into each muffin cup. Sprinkle more cheese and bacon on top. Salt and pepper to taste. Bake at 350 until egg is set.
