Pantry dinner! Sauté chopped onions in olive oil. Add minced garlic and chopped bell pepper. Add spices (I used cumin, coriander, cayenne, paprika, salt and pepper) and a can of diced tomatoes. Simmer for a few minutes and then add 1.5c cooked chickpeas (or one 15oz can) and half a bunch of chopped kale. Simmer until kale wilts, top with a fried egg! #notarecipe #pantrydinner #vegetarian
