Made a big batch of this slow cooker Tex mex chicken for me and the fiancé to eat all week! I like to serve it over a big bed of wilted greens with some sliced green olives on top (we loveeee olives). It's equally great served in a tortilla, to top a burrito bowl (hello cauli rice), loaded into a baked sweet potato or on zoodles! I've added cooker black beans and/or frozen corn before serving too.

8 boneless, skinless chicken breasts
1 red bell pepper, diced
1 yellow bell pepper, diced
1 24oz jar @wholefoods 365 Thick and Chunky Salsa
1 small can @traderjoesfood fire roasted green chilis
1 tsp @rancho_gordo chili powder
1 tsp @simplyorganicfoods ground coriander
1/2 tsp @simplyorganicfoods dried oregano
1 tsp pink Himalayan salt
3/4 cup chopped fresh cilantro

Combine everything but the cilantro in a slow cooker (I use @instantpotcompany) and cook on low for 5 hours. Stir in the fresh cilantro before serving!
