Tonight made kalamata chicken burgers - 1lb ground chicken, a handful each of chopped kalamatas, fresh basil, and baby spinach, plus 2 T Dijon and a pinch of salt. Mixed it all together and let the mix rest in the fridge for a few hours before searing in a pan with olive oil. Served with a bit of Rao's marinara and roasted veg!
