Pasta with kicky lentils and béchamel.
So how cool are pulses. This baked pasta began as a simple lentil soup for the week. Added few Tbsp's of Harissa at around Day 3 to knock my tastebuds awake. Then just today added some crushed tomatoes to it. Simmered a bit. Made a béchamel with a bit of nutmeg and sharp aged cheddar. Al dente Penne, lentil sauce into buttered casserole. Topped with béchamel and a few swings of the cheddar on the grater. About 20 mins in a very hot oven. I'm knackered from lots of work deadlines and trying to save the world with my fellow humans but this was super easy, and it smells really delicious. XO. Zzzzzzzz
