Crispy boneless chicken thigh. Carrot purée with roasted garlic and shallot. Broccolini with pancetta.

Chicken thigh sous vide @165f to equilibrium (thanks Joule), crisp skin in coconut oil. Sauté shallots and add garlic and chicken stock, simmer and purée. Render pancetta and cook broccolini, charming lightly.
