Presto Pesto! Super quick pesto.
In a food processor first whizz up 1/2 cup of olive oil, a handful of pine nuts, and 3 cloves of garlic. Add a pound of basil that's been washed well and 1/2 or 1 cup of Parmesan cheese (depends on your preference). Take it out of the food processor and into a bowl and add salt, pepper, and lime juice to taste.
Pesto can stay in the fridge for at least 2 weeks and can be used like a spread on literally anything. Enjoy!!
