Pork and Enoki Ramen
-- Prepare 2 cups dashi. Add a scant 2 tb each soy sauce and mirin. Bring to a low boil, and keep boiling until ready to eat.
-- Boil in water 1 bundle dry ramen noodles 4-5 min, or until tender. Drain and rinse well with cold water to prevent sticking.
-- Cut pork cutlet into thin strips. Sauté in cooking oil with ginger and garlic. Set aside.
-- Trim roots from fresh enoki mushrooms and wash. Add enoki and chopped spring onions to taste to the broth. Boil 4-5 mins, or until tender.
-- Combine noodles, broth with mushrooms, and sliced pork in bowl. Serve immediately, hot, with sliced soft boiled egg.
