Vegetable biryani with whole grain rough puff pastry lid. The rough puff pastry was surprisingly easy to make, even with the dreadful flour I had, and totally worth it!

Cook up rice, I used brown basmati, add a selection of India inspired spices and some roasted carrot and sweet potato chunks, mix in peas and mushrooms. Make a yogurt and herb paste, (coriander, garlic and ginger are obligatory). Whack all of this in a pie dish, add a strip of pastry around the rim of the dish before topping it all off with the rest of the pastry. Egg wash and some fennel seeds.

Serve with a light raita.
