Pasta with anchovies and breadcrumbs.
For the breadcrumbs, make fresh breadcrumbs or use store bought. Combine with lemon zest, salt, pepper, garlic. Fry in olive oil until crisp and remove with slotted spoon. In same pan, warm anchovies until they break down. Add chili flakes then toss cooked pasta in pan with a cup of pasta water. Add parmesan cheese half of the breadcrumbs mixture, a squeeze of lemon, a knob of butter and parsley. Toss until pasta is well coated and serve with more breadcrumbs on top.
