Cut up all the veggies: I used zucchini, baby purple, red and white potatoes, portobello mushrooms, red onions and cherry tomatoes on the vine, red onions and copies cloves of garlic. Add fresh herbs. I used rosemary and oregano.
Generously sprinkle with evoo, kosher salt, black pepper and red pepper. Bake for 20 min at 420 degrees then toss the vegetables and put back in oven for 15-20 min more. Done! If you like grate some Parmesan (or not). Mangia!
