How do you prepare those artichokes they look delicious

I remove a few extra leaves so I am left with the heart, then chop it very very thin... To prevent it from turning brown, if I am cooking or preparing something else, I let it soak in cold lemon water. Then I just toss it with olive oil salt and pepper and, even better, a few leaves of Parmesan cheese (which I did not have last time). Hope this helps.
