When you haven't seen the sun for days, and the snow just keeps coming, it can be hard to eat healthy. The answer? Noodle salad! Took leftover potsticker filling of shiitake, napa cabbage, scallion & ginger and made a quick dressing of coconut aminos, soy sauce, sesame oil and lime juice, tossed with the rice noodles and garnished w/ more scallion, cilantro and togarashi.
