Do something healthy- gluten free "pad Thai". Roasted spaghetti squash (cut it into rings- I promise it's worth it!) raw zucchini noodles and red cabbage make up your noodles.
The sauce is a blend of natural peanut butter, gluten free tamari (or coconut Aminos), sambal, lime, sesame oil and just a splash of coconut milk, fish sauce and my own secret weapon- a tiny squirt of Dijon mustard. Not claiming it's authentic, but it certainly is delicious!
