Korean black bean sauce noodles- Jajangmyeon, 자장면
Made my own version with plenty of diced veggies instead of pork and potato.
Heat oil in wok, heat black bean paste with brown sugar. Cook the paste for about 5/6 minutes. Remove the paste from heat, add veggies to the wok and cook then return black bean paste to wok with veggies.
In a bowl mix some water and cornstarch, add to wok. Mix and cook for another 10 minutes.
Serve over udon noodles with boiled egg
