Very Berry Buttercream Frosting
3 Cups Confectioners Sugar
1 Cup a mix of Berries Blueberries, Raspberries, Blackberries if you don't have Mixed Berries just use 1 cup of plain Raspberries.
1 Stick Room Temperature Unsalted Butter
1tbs Vanilla Extract
1) Cream butter and Confectioners Sugar together gradually adding in the Confectioners one cup at a time.
2) Add in Vanilla Extract and gradually add in Berries. If using a Kitchen Aid on low speed.
3) If using a mixer turn up to medium speed. Frosting should look fluffy and a deep pink but not too thick. If it's too thick add heavy cream or milk until it's at your desired consistency.
I made this for a dark chocolate cake with chocolate ganache in between the layers. You can also use it for a dark chocolate cupcake punch a hole in the middle with a knife or cupcake punch and put the ganache inside. Frosting looks beautiful for decorating cupcakes. I would put the cake recipe but I wrote it down somewhere hopefully I can get it up soon.
