Wash and trim the ends of rhubarb. Then cut into short lengths. Lay them in a tray (nonreactive) and sprinkle with sugar. Add a squeeze of orange juice and a bruised cardamom pod. Roast on high heat for twenty minutes. Serve with yoghurt or cream.
