Persian-inspired frittata: sauté chopped dill, parsley and cilantro in olive oil over medium heat. Add caramelized onions and a tablespoon of their oil and stir to distribute ingredients in the pan. Add five eggs (cracked and stirred in the pan, but could beat them and pour them in instead--either way sprinkle some salt on the eggs) and let the bottom set. Crumble goat cheese on top and put it under the broiler for 3 minutes to set the top and melt the cheese. Serve with plain yogurt.
