Sear lamb shanks in olive oil until brown. Add chopped onion, carrots, celery, garlic, along with thyme sprigs and bay leaves. Half a bottle of white wine and some salt and pepper too. Cover and simmer for an hour and then add zest of one lemon and fingerlings. Finish with lemon juice and chopped parsley. I added some sautéed baby kale.
