Anything and Everything Enchiladas
Make enchiladas casserole style. Start with a base of enchilada sauce and layer tortillas and filling until you fill your pan. Sometimes I just do sauce and cheese, other times I throw in the whole refrigerator. Today's version included cheese, black beans, zucchini, yellow squash, cumin, minced carrots and onions, and sauce. Baked at 375 till cooked through, heat bumped up to 400 for just a few minutes to crisp the top layer.
