Pizza Monday! Smitten kitchen's pizza dough: mix 1/4 + 1/8 tsp yeast in 1/2c warm water, add 1 1/2 cups flour (I used 1/2 cup whole wheat and 1 cup all purpose) and a teaspoon of salt. Knead by hand or mixer for 5 min then let rise in an oiled bowl in the fridge overnight. Heat pizza stone in the oven as hot as it will go. Roast eggplant while dough comes to room temp. Top with pesto (baby kale, basil, walnuts, garlic, olive oil, Parmesan, red pepper flakes), roasted eggplant, roasted red peppers, hot peppers, fresh mozzarella and more olive oil.
