Sweet pepper, spinach, & chicken in a white wine cream sauce, topped with pieces of baguette. I used leftover chopped roast chicken and half of a day old baguette. Cook diced white onion in your chosen fat in an oven safe pan. I used leftover chicken jus for extra flavour. When softened and golden, add minced garlic. Add chopped peppers and sauté, and then add lots of spinach to wilt. Add a healthy dose of white wine, season with salt & pepper, and then add double cream. Bring to a boil and add torn pieces of baguette that have been drizzled in olive oil & seasoned. Bake at 180c for 10-15 minutes.
