Cauliflower and hazelnut soup : 1 head of cauliflower , 1/4 cup toasted hazelnuts , 2.5 cups vegetable broth, 1 large clove of garlic minced , 1/2 small onion . Start by sautéing garlic , onion, and cauliflower in olive oil for 10 minutes or until the cauliflower starts to brown. Bring the vegetable oil to a boil and stir in the cauliflower . Add parsley , salt , and pepper. Let it cook for 15- 20 minutes . Transfer into a blender until smooth . Serve with shredded cheese and parsley on top
