Penne with sun-dried tomatoes and rocket tossed in a lemony, buttery sauce.
While the pasta cooks (in ocean water! Jk, but salt that water), slice thinly the sun-dried tomatoes (the antipasto sort you buy in jars) and set aside with a handful of rocket for each serving. For the sauce, melt some butter, chuck in a bit of the pasta water, some lemon juice, and freshly grated Parmesan. Stir and then toss together everything with lemon zest and more Parmesan. Pepper, plate up and enjoy!
