- divide corns in half and cook them in salted water until soften. drain.
- heat up a pan and use tongs to turn each corn until it darkens.
- mayo: 2 yolks, 1 whole egg, canola oil, lime juice and sriracha sauce. You can either use a mixer or a fouet. Gently pour the oil as you pulse the eggs. The lime juice and the oil tend to thicken your mayo. Add a little salt and at last some srirasha drops. Refrigerate.
- brush some mayo on each corn and sprinkle Parmesan cheese.
- sprinkle a bit of hot paprika (optional) & voilá
