Chipotle-style chicken with black beans and rice. Guaranteed lunchbox envy!
Marinate the chicken in a can of chipotle chillies in adobe sauce, salt, pepper and paprika. Fry in batches in a cast-iron skillet.
For the beans, saute onions until translucent. Add garlic, paprika, cumin and coriander. Pour in canned black beans with half the liquid removed. Season with salt, pepper and the hot sauce of your choice. Cook until most of the liquid has evaporated.
Serve with rice and a dash of lime and some more hot sauce.
