Sausage, onions, and potatoes - slice thinly a couple of large onions and several fat cloves of garlic. Put in straight-sided skillet with sweet Italian sausage and a few glugs of olive oil. Cover and cook over medium low heat until onions are very soft. Remove cover, crank heat to high and cook, stirring, until onions are light gold. Add peeled Yukon gold potatoes cut into medium chunks, a few bay leaves, dried oregano, and red chili flakes. Cover, reduce heat to low and cook until potatoes are soft. Season with salt and pepper, sprinkle with chopped parsley and serve.
