Easy roast chicken: drizzle with olive oil, I seasoned with herbes de Provence, garlic and onion granules, polenta, salt, and pepper; just sprinkle all seasonings all over the bird. Roast at 180c for 1 hour (covered) and 50 minutes (uncovered). Let rest for half an hour before carving.
