Homemade chicken stock: I used the carcass of a whole chicken (skin, bones, and carcass), 1 white onion, 1 carrot, 1 pepper, potato peels, celery, a whole garlic bulb, peppercorns, salt, turmeric, 1 sprig of Rosemary, flat leaf parsley. Cover with water and simmer for a few hours, skimming the fat every once in a while. Sieve the broth and freeze, or keep in fridge for up to a week.
