Meyer lemon cashew cream π
Total not recipe; just used what I had to whip-up a pi(e) day pie:) For crust, combined in a food processor blanched almond flour, pecans, dates and a pinch of pink Himalayan salt. For filling, blended soaked cashews, lemon juice, agave syrup, dash vanilla extract and pinch of salt until smooth and creamy. The filling would have setup better with the addition of coconut oil, but I wasn't keen on lemon/coconut flavor combination.
Sweet, creamy, lemon-y -- delicious!
