Stracciatella: heat a homemade chicken stock to a rolling boil and drop in an egg (1 person serving) and whisk. Season with salt and pepper. For the croutons, tear older crusty bread, drizzle in olive oil, season with salt and pepper and toast in oven @ 180c for 5-7 minutes. I topped with some English cheddar, which would likely disgust Italians but it was delicious.
