Modified Niçoise salad: roasted the baby potatoes, made a dressing with olive oil, balsamic vinegar, mustard, and herbs to mix with the canned tuna, hard boiled eggs, chopped cherry tomatoes, black olives, and goat cheese over a bed of spring greens. Easy and filling!
