Clean Out The Pantry, Ep. 23: Pumpkin mole & bison risotto, garnished with slivered almonds. Cook 1 lb. ground bison in a medium pot until browned. Add 3/4 cup arborio rice and cook for a minute or two. Add 1 jar of Williams-Sonoma Pumpkin Mole Simmer Sauce and simmer, stirring occasionally, until most of the liquid has been absorbed and the rice is done. Serve with slivered almonds on top.
