In a preheated 450 degree F oven roast a pound of small new potatoes (the newer the better) and a few cloves of peeled garlic in a large black steel or cast iron pan, drizzled with olive oil and dusted with kosher salt and black pepper. Leave them alone for at least 30 minutes. Don't even look at them. At the 30 minute point, remove the pan from the oven, and flip each potato with a small spatula. Flatten each one until it bursts open, and return the pan to the oven to continue to roast for another 15 minutes. Shower with more salt and black pepper before serving. (Discard garlic cloves. Or eat them.).
