Pound boneless, skin on chicken breasts until they are an inch thick. Season w salt and pepper and marinate 1-3 hours.
Clarify 3 T of butter and add to a sauté pan over med high heat.
Season flour and dust chicken breasts lightly.
Cook skin side down 5-6 min until skin is brown.
Flip and put into 400 oven for 5 min.
