After a fantastic birthday weekend of eating our way through Portland, ME (and walking almost 20 miles while there), I guess it's time to cook for myself again: pan fried tofu, basmati rice, and sautéed red bell peppers and bok choy, with a quick sauce of half soy/half tamari, fresh squeezed lime juice, scallions, fresh grated ginger, and a bit of sambal oelek. Perfect weeknight dinner!
