Homemade pasta... is it worth it? Still not sure. This ravioli is filled with a purée of sweet peas, shallots, goat cheese, ricotta and Parmesan
Sauce is a reduced lobster stock, basic roux, lots of wine and onions. Peas were added (too early, thus the terrible color!)
Lobster was gently poached in butter.
All in all, delicious, but not something I'd like to do too often!
