Cheesy lentil potato croquettes

Leftover mashed potatoes mixed with one egg.
One cup of red lentils cooked in 1.5 cups veg or beef stock, sauté half an onion, one jalapeño, one large diced tomato, clove of garlic in olive oil. Mix into cooked lentils. Place tablespoon of lentil mixture & pepper jack cheese into 3 Tablespoons mashed potatoes form into a ball. Repeat. Freeze for one hour, roll in flour deep fry until golden.
